Vegan Reuben Bagel

Serves 2

You will need:

  • 2 bagels, sliced in half
  • ½ readymade sauerkraut, drained
  • 2-4 slices of Swiss cheese or vegan cheese replacement
  • 100g shredded pork
  • 2-4 large gherkins, thinly sliced
  • 2 tablespoons mayonnaise
  • Sriracha sauce (optional)

Lightly toast the bagels and top the bottom half with the sauerkraut and a slice of cheese. Grill in the oven until the cheese has melted. Top the bagel with the gherkin, pork and a drizzle of sriracha if desired. Spread the top half of the bagel with mayonnaise and close the sandwich. Serve immediately with extra gherkins.

Pork Banh Mi

Serves 2-4

You will need:

  • 1 French baguette, quartered
  • 2 carrots, peeled and julienned
  • ½ shredded cabbage
  • Handful of fresh coriander, roughly chopped
  • 200g shredded pork
  • Hoisin sauce and Sriracha sauce
  • Spring onions, finely sliced

Spread the baguette sections with a combination of hoisin and sriracha sauce and top with cabbage, carrot and coriander. Add the pork and sprinkle over the spring onions. Serve immediately.

Barbecue Pork Buns with Coleslaw

Serves 2-4

You will need:

  • 400g shredded pork
  • 4-8 soft buns, halved
  • 25ml barbecue sauce
  • 1 cup shredded cabbage
  • 30ml mayonnaise
  • ½ red onion, thinly sliced
  • Salt and pepper

Combine the cabbage with the onion and mayonnaise and season to taste. Stir the pork through the barbecue sauce and gently heat in a pan. Stuff the buns with the coleslaw and the pork and serve immediately.

Creamy Pork Stroganoff

Serves 2

You will need:

  • ½ cup button mushrooms, halved
  • 1 brown onion, finely chopped
  • Olive oil
  • 300g shredded pork
  • 150ml fresh cream
  • 10ml Dijon mustard
  • 6 sprigs of fresh flatleaf parsley, finely chopped
  • 1 cup of rice, cooked
  • Salt and pepper

Fry the onion and mushrooms in the olive oil until tender. Season with salt and pepper and pour over the cream. Stir in the mustard and add the pork. Simmer the stroganoff until thickened, scatter over the parsley and serve with rice.

Hawaiian Pizza

Serves 2-4

You will need:

  • A readymade pizza base
  • 2 tablespoons cream cheese
  • ½ cup grated mozzarella cheese
  • 2 tablespoons chopped pineapple
  • 100g shredded pork
  • 2 spring onions, finely chopped

Preheat the oven to 220°C. Spread the cream cheese over the pizza base and scatter over the mozzarella cheese. Top with the pineapple and shredded pork and bake until the pizza crust is golden brown and the cheese has melted. Scatter over the spring onions, slice the pizza and serve.
